In fact, this cut (recipe learned in a cooking cosro) provided for the use of brown stock ......
since I'm not going to put myself to make the fund brown due to the long process that requires, first and foremost the use of bone meal and slaughterhouse waste to be cooked for hours, I decided to invent a sauce that did pretend to be a brown background ..... but at the same time was fast to make, so here's to you .......
SLICED BEEF IN "gravy"!
Ingredients (2 persons)
• 1 piece cut from about 250/300 gr
• extra virgin olive oil, butter, salt and pepper to taste
For the Salsa
• 1 cube fried ready-made home (alternatively prepare a little fried at the moment with carrots celery and onions)
• Oil, soy sauce, water and flour to taste
Preparation
Prepare the sauce: In a saucepan put a bit 'of water and a little olive oil and melt the nut browned, add some' soy sauce (about 2 tablespoons), the juice of cooked meat in skillet and cook, stirring. Add a little flour, stir quickly, and then diluted with a little water for other desired consistency. Blend with blender and keep warm. In a pan with brown butter and oil as soon as the cut on both sides and pepper then place in a baking dish and continue cooking for a few minutes in the oven at 160 ° ventilation. Remove the meat from the oven, cut into thick slices about ½ cm (inside should be pink), place them on plates and serve accompanied by the "brown sauce".
