Ultimi scampoli d'estate: le pesche ripiene alla piemontese!

When summer arrives, and starts the fishing season, the first thing that comes to mind to prepare it is the "lost pien" or the stuffed peaches!


Not that in reality this is a recipe typical of the family: I do not remember seeing them do that to my mother or my grandmothers, but it is true in the air that I always smelled taste "because I come from a range are really traditional!


My mom actually prepare them simply by putting to boil in saucepan with macaroons, a little sugar and cocoa, almost jam ways: very good even so, I assure you, but you want to put the charm of a beautiful half peach on a plate, ready to be eaten?! Do not know about you but I can not resist!
Thus, starting from simple ingredients of my mom, I created my stuffed peaches: I do not put egg, how often I read in other recipes, but they are equally delicious!
Now we are running out with the peaches, take this opportunity now and still will not regret it!



Piedmont-STUFFED PEACHES


Ingredients
• 10 large ripe peaches
• 200 grams of dried macaroons
• 30 grams of cocoa
• 30 grams of sugar (optional)

Preparation
Thermomix: mettere gli amaretti nel boccale e tritarli 15 sec vel 5 .
Tradizionale: tritare al mixer non troppo finemente gli amaretti.
Lavare le pesche e dividerle a metà; privarle dell’osso e scavarle un po’ con uno scavino o un cucchiaino. Mettere la polpa scavata delle pesche insieme agli amaretti tritati, aggiungere lo zucchero e il cacao e nel bimby amalgamare a vel 3 , oppure amalgamare al mixer  (se e pesche non fossero troppo mature e il composto risultasse asciutto, aggiungere un po’ di moscato o succo di frutta). Preriscaldare il forno (cottura ventilata) a 180°, intanto disporre le mezze pesche su una teglia con sopra a sheet of baking paper and fill with the stuffing. A pleasure to put on each of a butter. Bake in preheated oven 35 to 40 minutes max. Cool and serve, be eaten at room temperature.
