When I read ArabaFelice the launch of its first contest ..... I said to myself: no, not taking part .... the apple is a food so simple yet so versatile .. .. and I'm not drunk in some special culinary fantasy .... who knows what and how many wonderful recipes we will be in the race ..... I figured it might even fit into my small foodblogger from ... unpretentious!
But when you put your destiny .......
The first weekend in November as we have become a tradition at the Festival of Cervere Porro (but of this I will have to tell you in an upcoming post): to show the market for leeks The big tent under which, during the fair, the farmers sell their leeks, was a producer who not only sell these wonderful fruits of the earth, also sold its production of other fruits and vegetables. When my eye rests on a basket full of quince ..... ...... I got a start and I have bought a couple of pounds!
I did not in fact difficult to confess that I had never seen quinces ... but I had heard about ..... and above all ...... I had tasted in the form of a celestial flan! In the restaurant where we gave our wedding dinner propose, as a superb dessert flan quince, with whom I have an appointment after a meal every time we allow ourselves as a gift a dinner there (unfortunately just is not so ... cheap!)
..... So when I saw the quinces .... I immediately thought that I could use them to try to replicate at home the famous flan! And I must say that although they signed an invention of the experiment was Not bad!
Then ...... I thought ..... but the quinces and apples are the way with this recipe I might as well participate in the contest Arabafelice .......
........ So here it is!!
FLAN quince
Ingredients
• 500gr of chopped quince (excluding peel and domestic waste)
• 2 eggs • 200 gr of fresh cream
• 100g sugar •
cinnamon and butter to taste
Preparation
already cut the flesh clean of the quince in little chunks, then simmer in a pan by adding a bit 'of water, until it is pretty soft. Sprinkle with a little 'of cinnamon, mix, then place it in a bowl with the sugar, cream and egg yolks. Blend all the ingredients with blender. Meanwhile, assemble the whites until stiff, then mix gently to rest. Butter the molds very well (I used silicone ones and I've also buttered), then fill with mixture. Now we come to the kitchen ... .. I have cooked in a hot water bath at 180 ° static for 45 minutes after letting them cool down, I realized that they were not very firm, so I cooked further to 150 ° ventilation for about 20 minutes. At the end, after the second cooling ... they were perfect! Place in fridge and enjoy them not too cold.
